Most dips are low carb because they are high fat. Today for appies I made some dips to go with the cucumber stick – and it went down fast!
 Low Carb and gluten free - Miso Mayo Dip (with ground sesame)
Mix mayo and miso together (ratio – 1 miso : 2 mayo) and a clove or two of garlic. Add sesame powder (optional). Mix them well. That’s it. Oh and it’s a tasty low carb dip. Miso ain’t too low carb but 1 tablespoon isn’t bad – 5 g of net carbs. As for mayo, the nutritional list on my jar of mayo says 0g (awesome) ! It’s quite tasty and easy to make, so I totally recommend it! Watch out for too much garlic, it will keep your hunky Edward-looking date away (unless you want to break up with them).
I’ve seen many miso-mayo dip recipes on the internet like this Japanese page – and then got inspired to put garlic in it. The inspiration came from remembering my pre-diabetic days when I enjoyed the mayo-garlic dip at Subeez, one of my favorite funky downtown Vancouver bistro. I used to order regular fries / yam fries at Subeez, and it came with the signature garlic mayo dip. Just adding garlic on mayo makes all the difference. Enjoy!
Before becoming diabetic, my very (unhealthy) way to release my stress was to binge eat a bag of doritos or sunchips and wash them down with coke. I can’t do that anymore because it’s totally a life hazard if I do that – I’d have high glucose readings for at least 2 days, even I fast after my binge. Since I became diabetic, I would instead snack on nuts when I get the munchies. These days, my choice of emotionally-binge-eating-low-carb-salty-crunchy stuff is this . Roasted Tamari Almonds are so tasty that sometime I would finish a whole tin of Planter’s Roasted Tamari almonds. Almonds are very good low-carb snacks, but too much of low carbs = high carbs. I tried to ban almonds from my diet and tried to snack on less tasty, more low-carb walnuts instead. The problem is, walnuts aren’t that tasty to me. I’d try roasting them but because they don’t taste as good as almonds, I wouldn’t feel too satisfied. It’s a good thing that I don’t binge on them, but at the same time, it turns me to almonds when I want that salty crunchy cravings.
So I was on a mission to make walnuts more tasty – and I found this recipe on how to make roasted tamari almonds. I got an idea and switched the almonds with walnuts and made roasted tamari walnuts.
I bought the Tamari Soy Sauce from Choices and immediately started roasting the walnuts when I got home.
The result?

A success! It really reminded me of the Japanese Soy-sauce Flavored Rice Cracker
I used to binge eat with my mom when I was a kid (haha it sounds like we eat our emotions with salty crunchy stuff lol). But it was missing something…yes artificial flavoring! I sprinkled a tiny bit of Japanese Fish Soup Stock Powder
and it tasted more and more like the Japanese rice crackers I adore!
I think it will be interesting if I sprinkle sugar substitute like erythritol too. Maybe it will taste like my also favorite Sweet Soy sauce Japanese rice crackers . I can’t wait to try.

It depends. There are low carb ones and that aren’t. What makes the difference? If it’s battered or not.
Last night I had battered chicken wings, so my sugar level shot up. Usually I would avoid them but I had no choice. I went to the ComedyMix at Vancouver last night with a hungry tummy. Unfortunately there were only 5 things on the menu – pepperoni pizza, vegetarian pizza, nachos, chicken wings & chicken strips. Not at all low carb friendly. Chicken wings probably had the least carb but big mistake of ordering it! It was heavily battered so my blood sugar level shot up to 9.9mol. This morning, it’s still at 6.9mol (T_T). I have to skip breakfast to get back to my normal blood sugar level.
In my experience, so far Boston Pizza has the best wings – they are tasty and low carb. It’s because Boston Pizza chicken wings aren’t battered.
It’s best to ask the server if they are battered or not before you order chicken wings. That said, it’s kinda hard to do that at a noisy bar or a comedy club…you’ll also sound like a really high maintenance person (but I guess I am, I have to fine tune my blood sugar level to sustain a healthy lifestyle!)
