Whenever I have some errands to run in the City Square Mall (near the Vancouver City Hall), I eat lunch at Vana’s.
I’m diabetic so there’s not much I can eat – either “pholess pho” or lemongrass chicken salad.
They have a combo for the lemongrass chicken and I ask them to make it in a salad (i.e. no pho/rice).
I love the lemongrass chicken salad here. The chicken is juicy and full of flavor. The customer service here is great too – the ladies are so friendly and spark a lot of joy when serving the food. Whenever I write the phrase “sparking of joy” I think of Marie Kondo’s book: The Life-Changing Magic of Tidying Up: The Japanese Art of Decluttering and Organizing.
As for the low carb part – I think the fish sauce on the salad spiked up my blood sugar level a bit. Pre-meal it was 5.6mol but after it was 8.8 mol. I like to keep my max glucose level to 7ish. I think it’s the fish sauce they smother on top. Next time, I’ll ask them to only put
For a lower carb option the pho-less beef soup might be better. I normally eat in when I have soup so I haven’t been able to check.
If you’re looking for salad, rather than ordering salad from Subway at the same food court, definitely choose Vana. The Subway chicken Caesar was over-priced, had few rubbery chicken, and only full of lettuce. It was quite depressing actually. And the customer service there – depressing. You can tell the employees prefer being somewhere else.
