It’s sunny with a chance of meatball kind of day here in Vancouver. My husband wanted to eat pasta for dinner so I made a low-carb ginormous meatball spaghetti for him. Instead of pasta I laid a layer of raw spinach and poured the meatball on top of it. It was oh-so-good! And piping hot because I made them in my awesome pressure cooker. I kind of followed the recipe here, but ignored the bread crumbs and used cumin seeds instead of nutmeg. It turned out amazing!
I have some for lunch today I can’t wait to eat it 🙂
