Mmm low carb panini! Yum yum

I finally mastered the low carb bread using my new breadmachine! I’ll post the recipe soon, but now that I can make a bread that doesn’t crumble easily, I can use my Hamilton Beach mini grill to make a panini!

A friend of mine gave this to me years ago for my housewarming. Before I became diabetic I used it quite often to make lunch. My mom also used to make me panini for lunch, and she just put ham & cheese in it but it was one of my favorite lunch. Simple’s the best!

It’s been almost 2 years since I’m diagnosed with diabetes, which means it’s been two years since I had a panini! I put the ham and cheese and just grilled it for couple of minutes until

melting! I couldn’t wait until lunch so I ate half for breakfast. My sugar level only rose from 4.9 mol -> 6.4 mol (88mg -> 115mg). That ain’t bad! Well my slice of bread is about 1 g of carb so total is about 3 g of carbs. Not bad!
My boyfriend took the grill to work and put tomato sauce, ham, cheese, and pesto! Mmmmmm yum yum, it was an instant hit to his coworkers too!
